Sourdough baking is not just about ingredients, measurements and techniques. For me and my family, it’s been part of an evolution towards a more connected life. It has served as a vehicle for connecting with my senses and my soul, my community, nature as a whole and my place in it.

For me, it’s also a creative process in which you are engaged with all your senses, reaching flow states as if you are dancing with the dough. This is possible when you’re not just adhering to a recipe, but understand how the ratios of ingredients and surrounding conditions affect the dough. Then you are free to play!

My husband and I went from a passion for baking to running a co-operative artisan bakery to meeting many of our needs on a homestead. After baking dozens of different specialities, our family go-to-loaf is a simple wheaten sourdough Country Bread with a gorgeous, soft and open crumb and a subtle sourdough flavour, perfect as savoury sandwiches and scrumptious as toast with homemade jam.

This course gives you the recipe for Country Bread and takes you through professional artisan sourdough techniques in clear and simple stages, but it also gives you the tools to understand the principles of how sourdough works, so you too can be creative and dance with the dough.

The course contains all the tools and everything you need to know in a compact format, so you don’t need to trawl through hours of content to check how to shape a baton or test the ripeness of your starter. With expertly edited on-point video content and extended notes that support the video tutorials, you’ll find it easy to practice wild yeast baking and keep coming back for instruction you need at any stage of the process.

Who this course is for:

  • Beginner bread bakers or sourdough bakers
  • Intermediate bakers wanting to learn professional artisan techniques for sourdough baking
  • Intermediate sourdough bakers looking to deepen their understanding of the process to release creativity beyond recipes
  • Anyone seeking to connect with their needs as a human; with nature, with community
