Thanks for considering this course that I have prepared after accumulating 30 years of winemaking career in small, medium and large environments. My plan is to give as many insights as I can along the way, because I know that there’s plenty of access to main stream knowledge, so I hope you find this useful.
This is the first part of a course that will end with a full coverage of how grapes are grown, including some of the latest technology advances, how wines are made, including the various wine styles and methods, and wine appreciation, including steps and tips for a good wine tasting.
In this part, we’ll start with a bit of the rich history of this fascinating beverage, which starts with the dawn of human civilizations in the Middle East, the very place of origin of this wonderful plant, Vitis vinifera, to then make a quick stop into what to pay attention to when faced with judging a glass of an unknown wine, explaining the elements to be aware of, intensity, complexity and elegance, next time you are in front of a glass of wine. We’ll then immerse ourselves into the life of a vineyard during an entire year of plant growth, development and the various practices that comprise a full cycle, from pruning in the winter, flowering, veraison, ripening, harvest and the post harvest time.
Also, we’ll dive in what I think it’s the most important aspect when it comes to grape quality: Plant Water Relations. Moreover, we’ll talk about how decisive the harvest date decision is.
Terroir is another of the themes which we’re going to end with an interesting thought experiment.
Finally, we’ll dive into the world of winemaking with the basics of how whites and red wines are made.
